Meat Mixture Ingredients

1/2 lb Ground Beef (or Ground Meat of Choice)

3 Garlic Cloves Minced

1/2 Yellow or White Onion Diced

Taco Seasoning (or Seasoning of Your Choice) to Taste

Salt and Pepper to Taste

Hot or Taco Sauce to Taste

Serving and Topping Ingredients

2-3 Slicer Tomatoes

Shredded Lettuce

Sour Cream

Pickled Jalapeno Peppers

Shredded Cheddar Cheese

Jarred Salasa or Pico del Gallo

Chopped Cilantro

Directions

  1. Prepare the meat mixture by adding a tablespoon of extra virgin olive oil to a hot skillet. Add In the onions and garlic and let cook until slightly translucent (for about a minute). Add in the ground beef and cook until fully browned. Add and stir in the seasonings and hot sauce until fully combined.
  2. Prepare the slicer tomatoes for filling by turning them top side down. Using a sharp knife, cut eight wedges into the tomato (cutting across four ways) about 2/3rds into the tomato so that the wedges are still connected at the bottom. Gently pull the wedges apart so that there is room to fill the tomatoes with the meat mixture and toppings.
  3. Fill each tomato with the meat mixture and then gently place the toppings atop the meat (lettuce, salsa/pico, cheese, sour cream, cilantro, jalapeno peppers) and serve.
