Ingredients

Ribs

½ Pound St. Louis Pork Ribs

Yellow or Dijon Mustard

4 Ounce Beer

 

Dry Rub for the Ribs

1 Tablespoon Salt

1 Tablespoon Black Pepper

1 Tablespoon Celery Salt

1 Tablespoon Brown Sugar

1 Tablespoon Granulated Garlic

1 Teaspoon Cayenne Pepper

1 Teaspoon Cumin

1 Tablespoon Mustard Powder

1 Tablespoon Chili Powder

1 Tablespoon Smoked Paprika

 

BBQ Sauce

1 Cup Ketchup

1 Cup Molasses

¼ Cup Vegetable Oil

¼ Cup Soy Sauce

¼ Cup Hoisin Sauce

1 ½ Tablespoons Worcestershire Sauce

1 ½ Tablespoons Tomato Paste

1 Tablespoon Mustard Powder

½ Tablespoon Black Pepper

½ Tablespoon Cayenne

½ Tablespoon Garlic Powder

½ Tablespoon Chili Powder

½ Tablespoon Ground Ginger

½ Tablespoon Cumin

½ Tablespoon Smoked Paprika

2 Tablespoons Honey

2 Tablespoons Brown Sugar

1 6 Ounce Can Tomato Sauce

4 Ounces Beer

1 Cup Vinegar

 

Directions

Preparing the Ribs

1.    Pat ribs dry and let come to room temperature.

2.   Thoroughly combine the dry rub ingredients in a small bowl.

3.   Preheat the oven to 300 degrees F.

4.   On a separate plate, slather the ribs with a layer of mustard.

5.   Cover the ribs with a generous amount of the rub on both sides.

6.   Put the ribs on a foil lined sheet pan and pour 4 ounces of beer around the ribs. Loosely cover the pan with additional foil so it is not directly touching the ribs.

7.   Put the ribs in the oven for 2-2.5 hours, checking and flipping halfway through.

8.   After this time, remove the foil and let cook for another 45 minutes-1 hour. Remove the ribs from the oven to rest (wrap in foil and set aside).

9.   While the ribs are resting, preheat a stovetop grill sheet on high heat (brush with oil in advance to prevent the meat from sticking).

10.  Once the ribs have rested for 10 minutes, put the ribs meat side down for four minutes on the grill until they are lightly charred. Flip over and brush the meat side with the BBQ sauce (directions below) while the bone side grills for another 4 minutes.

11.  Remove from the grill to a cutting board and cut in between each bone to arrange for serving.

 

Preparing the BBQ Sauce (While Ribs are in the Oven)

1.    Combine and whisk together all the ingredients in a saucepan and bring to a boil over medium-high heat. Reduce the heat and let simmer for at least one hour.
