Ingredients

1 lb skirt steak (purchase pre-sliced if possible)

2 Tablespoons Steak Seasoning

1 Tablespoon Cumin

1 Tablespoon Pepper

1 Teaspoon Salt

4 Tablespoons Extra Virgiin Olive Oil (2 Per Pan)

½ Red Bell Pepper (Or Color of Choice)

½ Yellow Bell Pepper (Or Color of Choice)

3 Garlic Cloves Minced

3 Strips Thick Cut Bacon

¼ Cup Beef Stock

½ Cup Steak Sauce

6 Pieces of Butter Lettuce (Two Per Wrap)

Blue Cheese Crumbles to Taste

Cherry Tomatoes to Taste (Cut in Half)

Cherry Peppers to Taste (Optional)

 

Directions

1.    Bring steak to room temperature and, in a bowl, season with the steak seasoning, cumin, salt and pepper. When done sit steak to the side.

2.    Heat a skillet (preferable cast iron) on the stovetop and then add 2 tablespoons olive oil.

3.    On a cutting board, cut the bell peppers and onions into long strips, then mince the garlic cloves.

4.    Add the onions and peppers to the skillet and sauté for about ten minutes.

5.    At the same time, heat a separate pan and add the other two tablespoons of olive oil.

6.    Add the strips of bacon to that pan and let “fry.” When strips begin to wrinkle, flip over and then remove when white-ish “liquid” begins to surround the bacon. Place the finished bacon on a plate covered in paper towels to absorb the excess fat/grease and set aside in a warm location.

7.    About ten minutes into the cooking of the onions and peppers, add the garlic and let cook for one additional minute. Then add the steak to the skillet. Let the steak sit without being moved for a minute before mixing with the other ingredients in the skillet with a spatula.

8.    Once the steak is browned on all sides, add the beef stock to life bits from the bottom of the skillet. After that, add in the steak sauce and stir until sauce has thickened.

9.    Remove the steak, peppers and onions from the skillet and let sit, covered, for 10 minutes.

10.  Take a serving plate and arrange the butter lettuce, placing two leaves on top of each other which will serve as the base of each wrap. Add the steak, onions and peppers to the lettuce wraps. Then add the chopped pieces of bacon, blue cheese crumbles, tomatoes and cherry peppers on top and serve.
