Sandwich Ingredients

1 Small Loaf of Ciabatta Bread

1 Thinly Cut Boneless Skinless Chicken Breast

2 Slices of Thick Cut Bacon

1 Tomato

Sliced Parmesan Cheese

Baby Arugula

Cesar Dressing Ingredients (You will need a food processor or blender)

1 1/2 Cup Mayonnaise

1 Teaspoon Dijon Mustard

1 Teaspoon Anchovy Paste

2 Tablespoons Parsley

2 Garlic Cloves

Juice of 1/2 Lemon

Directions

  1. Pre-heat oven to 400 degrees. Slice the tomato into 1/4 inch slices, drizzle with olive oil, sprinkle with salt/pepper, and lay them on an aluminum foil lined sheet tray. In tandem, take another sheet tray, top it with a corresponding sheet rack and lay the slices of bacon on top. Put both in the oven (keep tomatoes in the oven for 40 minutes and the bacon for 25-30 minutes).
  2. Prepare the Cesar dressing by chopping the garlic and parsley and adding to the food processor. Then add the mustard and anchovy paste and pulse. Once those items are combined, add in the lemon juice and mayonnaise and pulse again until the consistency is relatively smooth. Remove from the food processor, put in a container and chill until the other items are finished.
  3. Heat 1 1/2 table spoons of olive oil in a skillet, sprinkle a teaspoon each of salt and pepper on both sides of the thinly-cut chicken breast and add to the skillet. Cook for five minutes on each side or until the chicken is fully cooked. Once done, remove from the skillet, cover and set aside.
  4. Slice the bread loaf down the middle with a bread knife, place on a sheet pan and add to the already hot oven for about 10 minutes to allow it to toast.
  5. Take the bottom slide of bread, place on a plate and slather with the Cesar dressing. Add a layer of arugula and then add the oven-roasted tomatoes on top. Cut the chicken into small pieces and put on top of the tomato, and then cut each slice of bacon in half and add on top. Add the sliced parmesan cheese and on top of that another layer of arugula. Slather the top layer of bread with more dressing and top off the sandwich.
  6. Carefully cut the sandwich in half with a bread knife and serve.
